Spicy Tofu and Tomato Dip

Amount Measure Ingredient -- Preparation Method

2 tomatoes -- seeded and cut into chunks

2 scallions, green parts only -- thinly sliced

1 10 oz package soft tofu -- rinsed and drained

2 garlic cloves -- pressed

2 tablespoons extra-virgin olive oil

2 teaspoons balsamic vinegar

1/2 teaspoon red pepper flakes

1 tablespoon minced fresh marjoram or oregano, or 1 tsp

dried

kosher salt and freshly ground pepper to

taste

 

Chop the tomatoes and scallions in a blender or food processor until thoroughly

mixed. Add the remaining ingredients and puree until smooth.

 

Description:
