Plunge then into cold water and drain. Fan out on a large serving platter. Mix the soy sauce and rice vinegar together in a small bowl and serve cold alongside the asparagus. Place the sesame seeds in another bowl. Have guests dip each asparagus spear in the soy sauce, then into the sesame seeds.
