Spicy Quinoa Chili

1 large onion -- chopped

4 cloves garlic -- minced

4 teaspoons hot pepper oil -- or olive oil

2 14.5 oz cans vegetable broth

2 cups water

1 10 oz can chopped tomatoes with green chiles -- undrained

4 teaspoons ground cumin

2 teaspoons chili powder

1 teaspoon ground coriander

1 cup quinoa -- rinsed & drained

4 plum tomatoes -- chopped

 

In a large saucepan, cook onion and garlic in hot oil over medium-high heat

until tender. Stir in broth, water, undrained canned tomatoes, cumin, chili

powder, and coriander. Stir in quinoa.

 

Bring to boiling. Reduce heat and simmer, covered, about 20 minutes or until

quinoa is tender. Remove from heat and stir in tomatoes.
