Soy! - Jeanette Parsons Egan Serving Size : 12 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 18.25 oz package lemon cake mix 1 cup soft silken tofu -- pureed 1/2 cup water 2 tablespoons fresh lemon juice 1 tablespoon grated lemon zest 2 tablespoons poppy seeds Preheat oven to 350F. Spray 2 (9-inch) round baking pans with nonstick cooking spray. Blend together cake mix, tofu, water, lemon juice, lemon zest, and poppy seeds. Beat 2 minutes. Pour batter into prepared pans and bake 30 to 35 minutes or until centers spring back when lightly pressed. Cool in pans on a wire rack 10 minutes. Remove from pans and place on a wire rack to finish cooling. Cut into wedges to serve. Description: " This cake is quite moist and needs no frosting. Dust with powdered sugar, if desired.
