Guest guest Posted September 8, 2000 Report Share Posted September 8, 2000 * Exported from MasterCook * Pineapple Stuffed Sweet Potatoes Recipe By : Serving Size : 6 Preparation Time :0:00 Categories : Side Dishes Vegetables And Side Dishes Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 6 sweet potatoes 1 8 oz can undrained unsweetened pineapple 2 tablespoons margarine 1/4 teaspoon salt 1/4 teaspoon ground ginger 1/8 teaspoon ground nutmeg 6 curls orange rind Scrub sweet potatoes thoroughly. Pierce with fork. Bake at 375 degrees for 45 minutes or until done. Allow to cool to touch. Cut a small strip from the top of each potato leaving 1/4 inch of potato shell intact. Drain pineapple reserving juice. Combine potato pulp, pineapple juice, margarine, salt, and spices in a smal bowl. Beat at medium speed with electric mixer until fluffy. Stuff shells with potato mixture. Place in a shallow baking dish and bake at 375 degrees for 15 minutes. Garnish with orange curls if desired.
