Soy! - Jeanette Parsons Egan Serving Size : 12 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/2 cup crushed pineapple -- drained and juice reserved 3/4 cup (6 oz) soft silken tofu -- drained and pureed 3/4 cup sugar 1/4 cup vegetable oil 1 teaspoon pure vanilla extract 2 1/2 cups all-purpose flour 1/4 cup defatted soy flour 2 teaspoons baking powder 1/2 teaspoon salt 1/2 teaspoon baking soda 1 1/2 teaspoons ground allspice 1 teaspoon ground cinnamon 1 cup grated carrots 1/2 cup chopped pecans Creamy Vanilla Frosting Preheat oven to 350F. Spray 2 (9-inch) round baking pans with nonstick cooking spray. Add water to reserved pineapple juice to make 3/4 cup. Beat tofu, sugar, oil, and vanilla in a medium bowl until smooth. Stir in pineapple juice. Combine flours, baking powder, baking soda, salt, allspice, and cinnamon; beat into tofu mixture until combined. Stir in carrots, pineapple, and pecans. Pour into prepared pans and smooth tops. Bake about 30 minutes or until tops spring back when pressed. Cool in pans on a wire rack 10 minutes. Remove from pans and place on a wire rack to finish cooling. Place 1 layer topside down on a serving plate. Spread with frosting and top with remaining layer topside up. Frost top of cake with remaining frosting. Frost top of cake with remaining frosting. Refrigerate until chilled. Cut into wedges to serve. Refrigerate leftovers.
