Soy! - Jeanette Parsons Egan Serving Size : 16 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/2 cup (4oz) silken tofu -- drained 3/4 cup sugar 1/4 cup soft margarine 2 teaspoons pure vanilla extract 3/4 cup all-purpose flour 1/2 cup unsweetened cocoa powder 1/2 teaspoon baking powder 1/4 teaspoon salt Preheat oven to 350F. Spray a nonstick 8-inch-square pan with nonstick cooking spray. Beat tofu in a medium bowl until smooth. Add sugar, margarine, and vanilla and beat until combined. Combine flour, cocoa, baking powder, and salt in a small bowl. Add flour mixture to tofu mixture and beat until combined. Pour mixture into prepared pan. Bake 25 to 30 minutes or until top springs back whhen lightly pressed. Cool in pan 10 minutes. Remove from pan and cut into squares. Makes 16 2-inch squares Description: " The silken tofu replaces much of the margarine found in regular brownie recipes.
