Soy! - Jeanette Parsons Egan Serving Size : 6 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 12 oz package semisweet chocolate chips 1/4 cup pure maple syrup 1 12.3 oz package extra-firm low-fat silken tofu -- drained 1 8 oz package soy cream cheese or 8 oz whipped low-fat cream cheese 1 tablespoon instant expresso powder -- dissolved in 2 tablespoons hot water 1 tablespoon pure vanilla extract whipping cream, whipped, and chocolate-covered coffee beans for garnish (optional) Melt chocolate chips with maple syrup in a double boiler over simmering water, stirring occasionally. Combine tofu and cream cheese in a food processor and process until smooth. Add chocolate mixture, coffee, and vanilla and pulse until mixed. Spoon into 6 dessert dishes. Cover and refrigerate until chilled or up to 24 hours.
