This is what we had for tea last night and it was very good. Very quick,

too.

Rasa Indah's Malaysian Mee Goreng

300 g Hokkien noodles

150 g bean sprouts

100 g cooked shrimps -- optional

2 eggs -- lightly beaten

1 med cooked potato -- diced

1 med tomato -- diced

2 tbsps tomato sauce

2 tbsps cooking oil

1 tsp curry powder

1 tsp sugar

1/2 tsp salt

 

Heat oil in wok or large pan. Add eggs and cook until set. Then add

other ingredients. Stir fry for about two minutes. Garnish with shredded

lettuce, fried shallots and a piece of lemon.

Jo's note: I made this without the shrimps, and replaced the bean

shoots with spring onions and it was very good and very quick if

you cook the diced potatoes and then the noodles in the same

water.
