Guest guest Posted September 7, 2000 Report Share Posted September 7, 2000 * Exported from MasterCook * Vegan Banana Muffins Recipe By : The Electric Kitchen Serving Size : 1 Preparation Time :0:00 Categories : Breakfast Vegetarian Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 4 ripe apple bananas -- peeled OR 2 large bananas 1/4 cup raw sugar 1 tablespoon creamy peanut butter 1 teaspoon vanilla 2 tablespoons flax seed meal 1/2 cup water 1 1/2 cups whole wheat pastry flour 2 teaspoons baking powder 1/2 teaspoon baking soda 1/2 teaspoon salt 1/2 teaspoon ground cinnamon 2 1/2 tablespoons vegan carob chips OR chocolate chips 2 tablespoons raisins *This recipe calls for 2 to 2-1/2 tablespoons of vegan carob or chocolate chips, and 1 to 2 tablespoons raisins. Adjust to your taste. Preheat oven to 350°F. Break bananas into chunks; put in a blender or food processor and blend for a few seconds. Add sugar, peanut butter and vanilla; blend until smooth. Place in a bowl. Put flax seed meal and water into a blender or food processor; blend for about 1 minute, or until mixture is thick. In a large mixing bowl, sift flour, baking powder, baking soda, salt and cinnamon. Add banana and flax mixtures; stir only until ingredients are combined. Stir in carob/chocolate chips and raisins. Lightly spray muffin pans with cooking spray. Spoon batter into pans, filling cups 2/3 full. Bake for 20 minutes. Turn out onto racks to cool.
