Banana Waffles with Banana-Maple Syrup

Banana-Maple Syrup

1 3/4 cups all-purpose flour

3 tablespoons defatted soy flour

1 tablespoon baking powder

1/4 teaspoon salt

1/2 teaspoon ground cardamom

2 cups fat-free vanilla soy milk

1 cup mashed ripe bananas (about 2 medium)

2 tablespoons vegetable oil

 

Make syrup and keep warm. Preheat a waffle iron. Combine flours, baking

powder, salt, and cardamom in a medium bowl. Stir together soy milk, bananas,

and oil in another bowl. Stir milk mixture into flour mixture just until

combined. Spoon batter into hot waffle iron and bake according to

manufacturer's directions until lightly browned. Makes about 16 (4-inch)

waffles

 

Variation: Substitute cocoa-flavored soy milk for the vanilla soy milk.
