Gingered Orange and Pineapple With Fortune Cookies

1 teaspoon grated peeled fresh ginger

4 mint sprigs

4 fortune cookies

 

Combine the oranges, pineapple, and ginger in a bowl. Divide the fruit into 4

chilled parfait glasses and garnish each with a sprig

of mint and a fortune cookie.
