Guest guest Posted September 5, 2000 Report Share Posted September 5, 2000 * Exported from MasterCook * Vegan Mediterranean Sandwich, p. 269, recipe adapted Recipe By :Artemis Simopoulos Serving Size : 1 Preparation Time :0:00 Categories : Mediterranean Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 loaf italian bread (long and thin, I used Sugarbusters) olive oil, to fry veggies and for sandwich sprinkles salt and pepper 1 medium onion -- sliced 1/4 " thick 1 medium green or red pepper -- sliced 1/4-inch thick 1 large tomato -- sliced 1/2 " thick some tempeh, sliced and steamed 20 mins. and marinated in soy sauce for a few minutes (sliced 1/2-inch thick) (soy sauce for tempeh) 1/4 teaspoon capers, per person dandelion greens, cut into 4 " lengths Put olive oil in saucepan. Heat the oil and add onion rings and pepper strips. when almost softened, add tomato. Cut loaf in half. Hollow of inside of loaf of bread and toast. Fill bread with everything. Sprinkle with oil and S & P. Place top of bread on sandwich. Enclose sandwich with a napkin to eat and then make seconds for your guest who decided it's not so bad after all.
