Soy! - Jeanette Parsons Egan Serving Size : 4 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 teaspoon extra-virgin olive oil 1 cup chopped onion 1 cup frozen green soybeans 1/2 cup water 1 11 oz can whole-kernel corn -- drained 2 cups chopped fresh or canned tomatoes 1/2 teaspoon chopped fresh sage salt and freshly ground black pepper to taste Heat oil in a medium nonstick saucepan over medium heat. Add onion and saute, stirring occasionally, until softened, about 5 minutes. Add soybeans and water. Cover and simmer 5 minutes. Add corn, tomatoes, sage, salt, and pepper. Cover and simmer until vegetables are tender, about 5 minutes.
