Guest guest Posted September 4, 2000 Report Share Posted September 4, 2000 * Exported from MasterCook * Making it Healthy Pumpkin Bread Recipe By : Women.com Serving Size : 20 Preparation Time :1:20 Categories : Breads Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 cups pumpkin purée 4 egg whites 1/4 cup vegetable oil 3 cups flour 1 1/2 cups sugar 2 teaspoons ground cinnamon 1 teaspoon ground nutmeg 1 teaspoon salt 1 teaspoon baking powder 1/2 teaspoon baking soda 1/2 teaspoon ground cloves 2/3 cup walnuts -- chopped Heat the oven to 350°F. Grease and flour two 8-1/2 " x 4-1/2 " loaf pans. In a small bowl, combine pumpkin, egg whites and oil. In a large bowl combine flour, sugar, cinnamon, nutmeg, salt, baking powder, baking soda and cloves. Add pumpkin mixture and walnuts to dry ingredients. Stir until just combined. Spoon into prepared pans. Bake 1 hour until deep golden brown and a wooden toothpick, inserted in center, comes out clean. Cool completely.
