Elf friends: this doesn't probably meet the ELF posting (fat) requirements, but I think the nice thing about the recipe is that it is not fried and a light white sauce and low-fat cheese (or none) would be easy to do. SO, you might want this recipe or it might inspire you to create a variation. Brenda Adams * Exported from MasterCook * Eggplant Colombia Recipe By :Favorite Recipes of the xxx and Friends Serving Size : 4 Preparation Time :0:00 Categories : Eggplant Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 small eggplant salt 1 3/4 cups white sauce -- (med. thickness) 1/2 cup American cheese -- grated Pare and quarter eggplant. Cover with salted, boiled water. Cover and boil 15 minutes. Drain. Place drained eggplant on greased baking dish. Pour white sauce over eggplant. Top with cheese. Bake at 350 degrees F for 10 minutes. Serves 4 to 6 - - - - - - - - - - - - - - - - - - - NOTES : The staff and friends of a favorite little tavern/eatery in Portland put this cookbook together long ago - I don't think the recipes are actually from the restaurant's menu...but are, instead, favorites of all who call place home.
