Couscous Burritos

8 8-inch flour tortillas -- (flavored or plain)

1 cup vegetable broth

1 4 oz can diced green chiles -- drained

1/2 teaspoon ground turmeric

dash pepper

2/3 cup quick cooking couscous

1/4 cup sliced green onions

1 cup chopped tomatoes

3/4 cup chopped green bell pepper

1/2 cup finely shredded reduced-fat Mexican blend

cheese

salsa -- (optional)

 

Wrap the tortillas in foil. Heat in a 350ºF oven for 10 minutes to soften. (Or

wrap tortillas in microwave safe paper towels & microwave on high for 30

seconds.)

 

Meanwhile, in a large saucepan, combine the broth, green chile peppers,

turmeric, and pepper. Bring to boiling. Remove from heat and stir in couscous

and green onions. Let stand, covered, 5 minutes. Fluff couscous with a fork

and stir in tomatoes and bell pepper.

 

To assemble each burrito, spoon about 1/3 cup of the couscous mixture onto a

tortilla just below the center. Top with 2 tablespoons of cheese. Roll up the

tortilla. If desired, serve with salsa.
