Guest guest Posted September 2, 2000 Report Share Posted September 2, 2000 * Exported from MasterCook * Garden Veggie Quiche Recipe By : First for women 9/25/2000 Serving Size : 10 Preparation Time :0:05 Categories : Vegetarian, Main Dishes Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 package pie crust mix (11 oz.), prepared but not baked, as package directs 2 cups broccoli florets -- chopped 1 yellow squash -- chopped 1 leek (white and light green parts only) -- chopped 1 red pepper -- chopped 6 eggs 2 cups fat-free half-and-half 1/4 teaspoon salt 1/4 teaspoon freshly grated nutmeg 1/4 teaspoon hot pepper sauce 2 cups Swiss cheese -- grated Heat oven to 350 degrees F. On floured surface, roll out dough to 14-inch round; fit into a 9-inch X 2-inch fluted quiche pan with a removable bottom. Blind-bake dough for 20 minutes; let cool. Meanwhile, over medium heat in skillet coated with cooking spray, cook broccoli, squash, leek and red pepper for 8 minutes. Whisk together next five ingredients. Layer vegetables and Swiss cheese in crust; pour in egg mixture. Bake 50 minutes or until top puffs.
