Lightly oil a 1 1/8quart gratin dish or spray with nonstick cooking spray. In a small bowl combine the brown sugar, cinnamon allspice, and nutmeg. Cut the sweet potatoes into 1/4-inch slices, and arrange half of them in the prepared dish. Sprinkle the slices with half of the sugar mixture. Arrange the remaining half of the potatoes on top and sprinkle wit the remaining sugar mixture. Heat the soy milk in a saucepan until hot, being careful not to boil. Pour the soy milk slowly over the potatoes.
