Guest guest Posted September 2, 2000 Report Share Posted September 2, 2000 * Exported from MasterCook * Curried Cauliflower Puree Recipe By : 366 Simply Delicious Dairy-Free Recipes, R Robertson, p 236 Serving Size : 4 Preparation Time :0:00 Categories : Side Dishes Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 medium cauliflower -- trimmed (about 4 cups) 2 tablespoons corn oil 1 teaspoon curry powder 1/4 cup almond milk Salt 2 tablespoons snipped fresh chives -- for garnish Cut the cauliflower into small pieces and place in a saucepan with lightly salted boiling water to cover. Cook until tender, about 5 minutes; drain. Place the cooked cauliflower in a food processor and puree until smooth. Heat the oil in a saucepan over low heat. Add the curry powder and cook 1 minute, stirring to release its flavor. Add the cauliflower puree to the saucepan and stir to combine. Slowly stir in the almond milk to achieve a smooth consistency, and season with salt to taste.
