Mashed Sweet Potatoes

2 pounds sweet potatoes

1/4 cup soft silken tofu -- drained

1/4 cup rice milk

1/4 cup apple juice

1/4 teaspoon cinnamon

1/4 teaspoon salt

1/8 teaspoon freshly ground black pepper

 

Peel the potatoes and cut into 1/4-inch-thick slices. Place in a saucepan

and add water to cover. Bring to a boil, reduce the heat to medium, cover,

and cook for 15 minutes, or until tender. Drain the potatoes and puree in

a food processor or beat with an electric mixer along with the tofu, rice

milk, and apple juice. Season with the cinnamon, salt, and pepper.
