Guest guest Posted September 2, 2000 Report Share Posted September 2, 2000 * Exported from MasterCook * Zucchini And Sun-Dried Tomato Pizza Recipe By : 366 Simply Delicious Dairy-Free Recipes, R Robertson, p 211 Serving Size : 1 Preparation Time :0:00 Categories : Breads Pizza Soyfoods Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- ***CRUST*** 1 1/4 cups all-purpose flour 1/4 cup whole wheat flour 1/2 teaspoon salt 1 teaspoon dry yeast 1/2 cup warm water -- (110 to 115 degrees) 1 tablespoon olive oil ***TOPPING*** 3/4 cup tomato sauce 2 tablespoons minced fresh basil OR 1 teaspoon dried basil 1 cup thinly sliced zucchini -- blanched 1/2 cup chopped oil-packed sun-dried tomatoes 1 cup grated soy mozzarella cheese Salt and freshly ground black pepper In a food processor combine the flours and the salt with on/off pulses. In a small bowl, dissolve yeast in the water and add the olive oil. With the processor running, pour in the yeast mixture through the feed tube and process to form a dough ball, about 1 minute. Turn out onto a lightly floured surface and knead about 1 minute. Transfer the dough to a large oiled bowl, coating the top of the dough with oil as well. Cover with plastic wrap and a dry cloth and let it rise in a warm area until doubled, about 1 1/2 hours. Preheat the oven to 425 degrees. Punch the dough down. On a floured surface, roll out the dough into a 12-inch circle. Place on a lightly floured pizza pan or baking sheet. Combine the tomato sauce and basil and spread on the dough, leaving a 1/2 inch border along the outside. Spread the zucchini slices over the tomato sauce. Sprinkle the sun-dried tomatoes over the zucchini, and top with the mozzarella, and salt and pepper to taste.
