Quick Cream of Mushroom Soup

Amount Measure Ingredient -- Preparation Method

1 tablespoon olive oil

1/4 pound mushrooms -- sliced (12 cups)

1/2 cup minced celery leaves

2 tablespoons dry vermouth

3 1/2 cups vegetable stock

2 tablespoons minced fresh parsley

OR 2 tsp dried

1/2 teaspoon minced fresh thyme

OR a pinch dried

salt & freshly ground pepper

1 cup soy milk

 

Heat the oil in a large saucepan over medium heat. Add the mushrooms and celery

leaves and cook, stirring, for 5 minutes. Add the vermouth, stock, parsley, and

thyme, and simmer for 15 minutes. Season with salt and pepper to taste. Remove

from the heat. In a small bowl, combine the soy milk with 1/2 cup of the soup,

blending well. Stir the mixture gently into the soup and serve immediately.
