Guest guest Posted September 1, 2000 Report Share Posted September 1, 2000 * Exported from MasterCook * Sweet and Sour TVP with Pineapple Recipe By : Miriam Rudnick Serving Size : 4 Preparation Time :0:00 Categories : TVP Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 cup TVP chunks 1 tablespoon ketchup, low sodium 1 1/4 cups hot water 1 cup sliced carrots 1 green pepper -- cut in 1 " squares 1 can pineapple chunks in juice -- reserving liquid SIZE OF CAN - 20 ounces 1/4 cup sugar 1/4 cup cider vinegar 2 tablespoons cornstarch 1/4 cup Tamari soy sauce In a medium bowl, combine TVP chunks, ketchup and hot water; let stand for 5 minutes. Cover tightly and microwave on medium-high power, about 10 minutes. [OR - combine the ketchup and hot water together, then add 1/2 cup liquid to TVP chunks in a covered pan and simmer until chunks are tender but not mushy, about 20 to 30 minutes.] Bring 1 cup of water to a boil and add sliced carrots and peppers. Cover, return to a boil, cook for about 2 minutes or until tender and crisp. Remove from heat and drain, reserving liquid. Return liquid from carrots and peppers to a pan, then add the juice from the can of pineapple; bring to a boil, then add sugar and cider vinegar. In a small bowl combine the cornstarch and tamari. Stir the cornstarch mixture into the hot liquid. The sauce will thicken and come to a boil almost at once. Add the cooked TVP, carrots, peppers, and pineapple to the sauce. - - - - - - - - - - - - - - - - - - Serving Ideas : Serve on rice or crisp chow mein noodles. Maybe I just got a defective Mastercook disk! To clarify, I can't take credit for the actual recipe. It came from the TVP Cookbook, by Dorothy R. Bates.
