Soyfoods Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 10 ounces frozen chopped spinach -- thawed 1 tablespoon olive oil 1/4 cup minced shallots 1 tablespoon all-purpose flour 1 cup hot rice milk 1 cup firm tofu drained and crumbled 1/2 cup grated soy mozzarella cheese 1 tablespoon chopped fresh basil OR 1 teaspoon dried basil 1 pinch nutmeg Salt and freshly ground black pepper 1 pound ziti or other tubular pasta Squeeze the spinach in a towel to remove as much liquid as possible and. set aside. Heat the oil in a medium skillet, add the shallots, and cook over medium heat for 5 minutes, or until soft. Stir in the flour and cook, stirring, for 2 minutes. Reduce the heat to low, stir in the rice milk, and cook to produce a smooth sauce, about 3 minutes. Add the spinach, stirring to blend, then add the tofu, soy cheese, basil, nutmeg, and salt and pepper to taste. Meanwhile, cook the pasta in a large pot of boiling salted water until tender, but still firm to the bite. Drain the pasta and toss with the hot sauce.
