Tofu Ravioli

3 1/2 cups all-purpose flour

1/8 teaspoon salt

1 cup warm water -- (approximately)

3 cups firm tofu -- crumbled

2 tablespoons minced fresh parsley

OR 2 teaspoons dried parsley

3/4 teaspoon salt

3 cups firm tofu -- drained

3/4 teaspoon freshly ground black pepper

 

Serve these flavorful packets cloaked with your favorite tomato

sauce. Although tofu ravioli are available commercially prepared, they are

easy to make yourself and far more economical.

 

Mix the flour and salt together in a bowl and add just enough of the water

to make a soft dough. Knead well, about 5 minutes, and set aside. Place

the tofu in a mixing bowl add the parsley, salt, and pepper; mix well and

set aside. Divide the dough into 4 equal pieces and roll out on a floured

board. Cut into 3 X 5-inch rectangles. Place a heaping teaspoon of the

tofu mixture onto each rectangle, fold the dough over the filling to cover,

aligning the edges of the dough to form a square. Seal all round the edges

with a fork to secure the filling inside. Drop the squares into a large

pan of salted boiling water, a few at a time, and cook for 10 minutes, or

until the ravioli float to the surface. Drain well, and serve with your

favorite tomato sauce.
