Amount Measure Ingredient -- Preparation Method

-------- ------------ --------------------------------

1 16 oz package extra-firm tofu -- frozen and thawed

1/2 cup tomato sauce

2 tablespoons honey

2 tablespoons cider vinegar

1 tablespoon white miso

1 tablespoon sesame seeds

1 teaspoon dry mustard

hot pepper sauce to taste

Drain tofu and squeeze to remove all moisture. Cut tofu lengthwise into 3

slices; set aside in a single layer in a shallow dish.

Combine tomato sauce, honey, vinegar, miso, sesame seeds, mustard, and hot

pepper sauce in a small bowl. Pour mixture over tofu, turn to coat both sides

and let stand 15 minutes.

Preheat broiler. Spray a broiler pan with nonstick cooking spray. Arrange tofu

on pan. Broil about 4 inches from heat until browned; turn and brown remaining

side. Cut into cubes and serve with wooden picks. Makes 6 to 8 servings

Description:

" A piquant sause is the perfect foil for tofu. Freezing makes the tofu

more porous so it will easily absorb the sauce. "
