Cardamom-scented Tempeh and Pineapple with Rum Cream Sauce

1 pound tempeh -- cut into 1-inch cubes

1/2 pineapple -- peeled and cored

2 tablespoons corn oil

1/4 teaspoon ground cardamom

1/2 teaspoon sugar (or a natural sweetener)

1/4 teaspoon cinnamon

1/4 cup dark rum

1 cup plus 2 tablespoons almond milk

2 tablespoons cornstarch

salt and freshly ground pepper

toasted slivered almonds for garnish

(optional)

 

Simmer the tempeh in a saucepan in boiling water to cover for 10 minutes.

Remove from the water and pat dry. Cut the pineapple into 1/4-inch slices, and

quarter each slice to make bite-size pieces. Set aside. Heat the oil in a

large skillet over medium heat. Add the tempeh and cook until golden brown,

about 3 minutes per side. Remove the tempeh from the skillet, set aside and

keep warm. Reheat the same skillet, add the pineapple, cardamom, sugar, and

cinnamon and cook over medium heat, stirring occasionally, about 5 minutes.

Return the tempeh to the skillet. Increase the heat to medium-high, carefully

pour the rum into the pan and ignite, shaking the pan gently until the flame

subsides. Reduce the heat to low, stir in 1 cup of the almond milk, stirring

constantly. Combine the remaining 2 talespoons of almond milk with the

cornstarch and whisk it into the mixture. Simmer until thickened, and season

with salt and pepper to taste. Divide among 4 serving platess and s!

prinkle with the toasted almond slivers, if desired.
