Robertson p 73 Serving Size : 4 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 pound fresh peaches -- peeled pitted and sliced OR 2 cups canned peaches 1 cup silken tofu -- drained 1 cup fresh orange juice 1/2 cup almond milk 1 tablespoon mirin (or dry white wine) 1 tablespoon lemon juice 1/2 teaspoon powdered ginger 1/2 teaspoon sugar (or a natural sweetener) Fresh mint leaves -- for garnish Canned peaches also make a flavorful soup when fresh peaches are not in season. Puree the peaches in a food processor until smooth. Add all of the remaining ingredients and blend well, working in batches if necessary. Transfer to a glass or plastic container and refrigerate several hours or overnight until chilled.
