Robertson, p 71 Serving Size : 4 Preparation Time :0:00 Categories : Fruits Soups And Stews Soyfoods Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/2 cup apple juice 1/2 cup almond milk 1 cup firm silken tofu -- drained 1 1/2 cups freshly squeezed orange juice 2 cups chopped honeydew 2 cups chopped cantaloupe 1/4 cup fresh lime juice 1/3 cup honey (or a natural sweetener) 2 tablespoons minced fresh mint OR 1 teaspoon dried mint -- crumbled Fresh mint sprigs for garnish In a food processor, combine the apple juice, almond milk, and tofu until well blended. Transfer to a small bowl and set aside. In the food processor, puree the orange juice, honeydew, cantaloupe, and lime juice. Add the honey and minced mint. Pour into a serving bowl and carefully stir in the reserved mixture. Cover and refrigerate several hours before serving.
