Adjust to your needs. Preheat the barbecue grill. Brush each ear of corn with olive oil and sprinkle with salt and pepper. Grill the corn over medium-high heat until golden brown, 2 to 3 minutes per side, 8 to 10 minutes in all. Add salt and pepper as necessary. If serving as a vegetable, serve at once. *NOTE* To obtain grilled corn kernels, let the corn cool. Lay it flat on a cutting board and cut the kernels off the cobs in lengthwise swaths with a sharp knife. Yields: 2 to 4 servings as a vegetable.
