White Bean Dip with Garlic, Lemon and Basil

4 cups white beans -- * see note

1/3 cup fresh basil -- coarsely chopped

OR parsley leaves

1/4 cup lemon juice

1 tablespoon extra-virgin olive oil

2 large garlic cloves -- crushed

salt and pepper -- to taste

 

*This recipe calls for 4 cups white beans, soaked and cooked if dried, or

straight from can reserving any liquid.

 

Drain beans. Combine beans, basil, lemon juice, oil and garlic in the bowl of a

food processor. Process until smooth, adding reserving liquid tablespoon by

tablespoon, as necessary; add salt and pepper. Refrigerate at least one hour.

 

Serve with crisp vegetables (like peppers, celery and broccoli) or cut pita

triangles.

 

Serving Size: 1/3 cup.
