Guest guest Posted August 28, 2000 Report Share Posted August 28, 2000 * Exported from MasterCook * Great Pumpkin Cookies Recipe By : http://www.albertabarley.com/newpage/recipes/cookies.html Serving Size : 0 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 cups whole barley flour 1 cup quick cooking oats 1 teaspoon baking soda 1 teaspoon cinnamon 1/2 teaspoon salt 1 cup butter or margarine softened 1 cup packed brown sugar 1 egg -- slightly beaten 1 teaspoon vanilla 1 cup pumpkin -- canned or fresh 1 cup chocolate or orange flavored chips 1 cup raisins Combine flour, oats, cinnamon, and salt. In a separate bowl, cream butter. Add sugar gradually, beating until light and fluffy. Add egg and vanilla, mix well. Alternate additions of dry ingredients and pumpkin, mixing well after each addition. Stir in chocolate chips and raisins. Drop heaping teaspoons on lightly greased cookie sheet. Bake for 12 minutes at 375 degrees (190C). Remove from sheets, cool on rack. Makes about 4 dozen. Description: " Pumpkin is very nutritious!
