Guest guest Posted August 25, 2000 Report Share Posted August 25, 2000 Well it is definately an original idea! * Exported from MasterCook * Sweet Potato Polenta Recipe By : Natural Land Serving Size : 1 Preparation Time :0:00 Categories : Vegetables Vegetarian Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 large sweet potatoes (about 1-1/2 pound) 2 1/4 cups lite soy milk 2 cups water 3/4 teaspoon cinnamon 1/2 teaspoon nutmeg 1 cup polenta OR cornmeal Preheat oven to 400°F. In a nonstick baking pan, bake potatoes until tender, 45 minutes to 1 hour depending on size and shape of potatoes. Remove potatoes and set aside until cool enough to handle. Using a spoon, scoop flesh into a bowl, and mash lightly with 1/4 cup soy milk. Set aside. In a large pot, combine remaining soy milk, water, cinnamon and nutmeg. Whisk in polenta. Bring mixture to a boil, then reduce heat and simmer, stirring occasionally, about 20 minutes, until polenta is thick enough for a spoon to stand upright in it.
