Soy Cookie Pie Crust

1/2 cup sugar

2 tablespoons soy oil

1/2 teaspoon vanilla

1/4 cup water

2 tablespoons soy powder

1 1/4 cups unbleached flour

1 teaspoon baking powder

 

Preheat the oven to 350F.

 

Mix the dry ingredients in a food processor. While the processor is running,

add the wet ingredients, and process only until mixed. Gather together and

roll and shape in a pie pan. Prick and bake for 20 minutes or until browned.

 

Description:

" This makes a soft, cookie-like crust, especially good with fruit

tarts or cream pies. "
