Key Lime Pie Filling

Amount Measure Ingredient -- Preparation Method

3/4 cup fresh key lime juice

2 1/2 cups soy milk

1 cup sweetener of choice

5 tablespoons cornstarch

2 teaspoons organic lime zest.

 

Whip all the ingredients together until smooth.

 

Microwave Method: Pour in a 2-quart glass measuring cup or bowl, and cook on

high 10 minutes, stopping to whip every 2 minutes. Stovetop Method: Whip all

the ingredients together in a saucepan, and heat over moderate heat, stirring

constantly until thick and creamy.

 

Pour into a baked pie crust or serving dishes, and chill until firm. Top with

Creamy Tofu Topping and decorate with lime slices.
