Soy! - Jeanette Parsons Egan Serving Size : 6 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 teaspoon olive oil 1 medium onion -- finely chopped 1 celery stalk -- finely chopped 1 garlic clove -- minced 1 15 oz can crushed tomatoes 1 teaspoon dried basil 1/2 teaspoon dried oregano freshly ground black pepper Heat oil in a nonstick saucepan over medium-low heat. Add onion, celery, and garlic and cook, stirring occasionally, until vegetables are softened, about 5 minutes. Add tomatoes, herbs, and pepper, cover and simmer about 10 minutes or until vegetables are tender.
