Guest guest Posted August 24, 2000 Report Share Posted August 24, 2000 * Exported from MasterCook * Easy Tropical Bananas Recipe By :Southern Living Serving Size : 2 Preparation Time :0:10 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 1/2 cups angel food cake cubes 1 tablespoon light butter 2 tablespoons dark brown sugar 2 cups pineapple juice 3 tablespoons dark rum 1 teaspoon vanilla extract 1/4 teaspoon ground cinnamon 2 bananas -- each cut into 8 pieces 6 macadamia nuts -- toasted and chopped Nonfat vanilla frozen yogurt (optional) BAKE cake cubes in an 11- x 7-inch pan at 350° for 5 minutes or until lightly toasted. Set aside. MELT butter in a large nonstick skillet over medium-high heat; add sugar, and cook, stirring often, 5 minutes. Stir in juice and rum; cook 3 minutes. Stir in vanilla and cinnamon. Add banana, and cook 3 minutes. ARRANGE cake on individual plates. Spoon banana mixture over cake; drizzle with any remaining sauce, and sprinkle with nuts.
