Guest guest Posted August 24, 2000 Report Share Posted August 24, 2000 * Exported from MasterCook * Tofu Cheesecake Brownies Recipe By :Soyfoods Cookery - Louise Hagler Serving Size : 16 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- For the Brownie Layer: 2/3 cup soy milk 3 tablespoons unbleached flour 1/4 cup oil 1/2 cup cocoa 1 cup sweetener of choice 1 teaspoon vanilla 1 cup unbleached flour 2 tablespoons soy flour 1 teaspoon baking powder 1/4 teaspoon salt For the Cheesecake Layer: 1 10.5 oz package silken tofu 1/2 cup sweetener of choice 1 tablespoon unbleached flour 1 tablespoon lemon juice 2 teaspoons vanilla Preheat the oven to 350F. Brownie Layer: Whip together the soy milk and 3 tablespoons flour. Stovetop Method: Cook Over medium heat, stirring constantly until thickened. Microwave method: Cook on high 1 minute, whip, cook on high 1 more minute, and whip. Let cool completely. Beat togethwe the oil, cocoa, sweetener, and vanilla, then beat in the cooled soymilk and flour mixture. Add 1 cup flour, soy flour, baking powder, and salt, and beat until smooth. Oil your fingers and spread evenly into a 9-inch springform pan. Cheesecake Layer: Blend the tofu, 1/2 cup sweetener, 1 tablespoon flour, lemon juice, and 2 teaspoons vanilla in a blender until smooth and creamy. Pour evenly over thhe brownie layer, and bake for 1 hour. Cool and serve. Description: " These rich, eggless brownies topped with tofu cheesecake will be well received at any gathering.
