Guest guest Posted August 24, 2000 Report Share Posted August 24, 2000 * Exported from MasterCook * Tofu Creme-Filled Orange Crumb Cake Recipe By :Soyfoods Cookery - Louise Hagler Serving Size : 16 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- For the First Layer: 1 cup unbleached flour 1/2 cup granulated sweetener of choice 2 tablespoons oil 1 1/2 tablespoons organic orange zest 1/2 teaspoon salt 1/2 cup walnuts -- chopped For the Second Layer: 1 pound tofu 1/2 cup sweetener of choice 2 tablespoons cornstarch 1 tablespoon vanilla 1/2 teaspoon salt For the Third Layer: 1 1/2 cups soy milk 1 cup sweetener of choice 2 tablespoons oil 4 tablespoons orange juice 2 cups unbleached flour 1/2 cup walnuts -- chopped 2 teaspoons baking powder 1/2 teaspoon baking soda 1/2 teaspoon cinnamon 1/2 teaspoon salt 1/8 teaspoon nutmeg Preheat the oven to 350F. First Layer: Combine the flour, sweetener, oil, orange zest, and salt in a food proceeor until blended. Add the walnuts and process until chopped. Press the mixture into the bottom and up the sides of the bundt pan. Second Layer: Blend the ingredients for the second layer together in a food processor or blender until smooth and creamy. Pour and spread on top of the first layer. Third Layer: Mix together the flour, walnuts, baking powder, baking soda, cinnamon, and salt. Beat together the soy milk, sweetener, oil, and orange juice, add the dry ingredients, and beat until smooth. Pour and spread this mixture over the second layer, being careful not to stir the second and third layers together. Bake for 40 to 45 minutes. Let cool 15 minutes, then loosen the edges, and turn out onto a rack to cool. Description: " This orange-crumb-topped, creamy-filled spice cake is put together in three layers.
