Harvest Salad

Amount Measure Ingredient -- Preparation Method

2 cups cooked quinoa

1 cup frozen whole-kernel corn -- thawed

16 ounces canned pink beans -- drained and rinsed

1 tomato -- chopped

1 bunch green onions -- chopped

1/4 cup chopped fresh cilantro

OR flat-leaf parsley

2 tablespoons fresh lemon juice

1 teaspoon ground cumin

Hot pepper sauce to taste

 

Combine all ingredients except hot sauce in a serving bowl. Serve with the

bottle of hot sauce on the side, so each diner can add heat to his or her

taste.

 

Yield: 4 to 6 servings, calories: 218, fat: 2g, fiber: 11g.
