Guest guest Posted August 22, 2000 Report Share Posted August 22, 2000 * Exported from MasterCook * Tofu Loaf Recipe By :Soyfoods Cookery - Louise Hagler Serving Size : 6 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 1/2 pounds firm tofu -- mashed 1/2 cup wheat germ 1/2 cup fresh parsley -- chopped 1/4 cup onion -- minced 1 clove garlic -- minced 2 tablespoons soy sauce 1/2 tablespoon Dijon mustard 1/4 teaspoon freshly ground black pepper Preheat the oven to 350F. Mix all the ingredients together, and press evenly into an oiled loaf pan. Bake for about 50 minutes, then let cool on a rack for 10 to 15 minutes before removing from the pan. Tofu Burgers: Form the mixture into 6 to 8 burgers, and brown on both sides in olive oil on a non-stick griddle. Let cool a few minutes to firm up before serving. Serve on toasted buns with all the fixings. Description: " Serve this loaf hot with mashed potatoes and gravy. Try slicing any leftover loaf for sandwiches.
