Guest guest Posted August 22, 2000 Report Share Posted August 22, 2000 * Exported from MasterCook * Quick Peach Sherbet Recipe By : Everyday Cooking with Dr. Dean Ornish, page 141 Serving Size : 4 Preparation Time :0:00 Categories : Desserts Fruits Ornish: Everyday Cooking Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 4 medium peaches -- peeled and pitted and coarsely chopped 1/2 cup nonfat sour cream 2 tablespoons sugar plus 2 teaspoons sugar 2 teaspoons lemon juice 1 teaspoon vanilla extract 4 sprigs fresh mint -- (optional) SERVES 4 If you start with sweet, ripe fruit, you don't need to add much sugar to make a tasty fruit sherbet. Just freeze the cut-up fruit, then puree it with a little sugar and nonfat sour cream-no ice cream freezer required. This makes a soft, creamy sherbet that should be served immediately. Freeze the chopped peaches on a baking sheet until frozen hard, several hours or overnight. In a small bowl, whisk together sour cream, sugar, lemon juice, and vanilla. Transfer frozen peaches to a food processor and pulse until mixture is like snow. Add sour cream mixture and blend until smooth and creamy, stopping the machine and scraping down the sides of the bowl once or twice. Serve immediately, garnishing each portion with a mint sprig, if desired. TIP: This recipe works beautifully with other fresh fruit (try mangoes, strawberries, or blackberries) and with store.bought frozen fruit. Serving size: 3/4 cup.
