Guest guest Posted August 21, 2000 Report Share Posted August 21, 2000 * Exported from MasterCook * Lentil Loaf with Mashed Potato Topping and Herbed Gravy Recipe By : Imagine Foods Serving Size : 6 Preparation Time :0:00 Categories : Vegetarian Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/2 cup lentils -- rinsed 1 small red onion -- finely chopped 1 1/2 cups basmati rice -- cooked 1 stalk celery -- thinly sliced 2 garlic cloves -- minced 1 small carrot -- thinly sliced 2 1/2 cups water OR vegetable broth 1 cup bread crumbs 3/4 teaspoon sea salt 1 tablespoon Dijon mustard 2 teaspoons dried basil 2 teaspoons dried parsley 2 teaspoons Canola oil OR safflower oil 3 cups Herbed Gravy -- see recipe 2 eggs -- lightly beaten Mashed Potatoes -- see recipe *This recipe calls for 1-2 eggs but it is strictly optional. In medium saucepan, combine lentils and water/vegetable broth and bring to a full boil. Reduce heat, cover and simmer for 30 minutes. Add 3/4 teaspoon salt, then continue simmering for about 15 minutes or until lentils are soft and the water has been absorbed. In a small saucepan, sauté onions in oil until translucent. Add celery and carrots, cover and cook for 5 minutes. Pour vegetables into a mixing bowl and combine bread crumbs, rice, lentils, seasonings and eggs (if using); mix well. Place mixture in a lightly oiled 9 " x 5 " x 3 " loaf pan. Spread a thick layer of Mashed Potatoes on top. Bake uncovered for 30 minutes in a 375°F oven. Cut into thick slices and serve with generous amount of Herbed Gravy. *The website did not specify what degree the oven should be at, and since I have not tried it yet I ASSUMED that the above degree would work. - - - - - - - - - - - - - - - - - - NOTES : This recipe is brought to you via the courtesy of the Imagine Foods (the makers of the Rice Dream product line) website. * Exported from MasterCook * Herbed Gravy Recipe By : Imagine Foods Serving Size : 1 Preparation Time :0:00 Categories : Sauces Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/3 cup whole wheat pastry flour 2 tablespoons safflower oil OR Canola oil 1 cup Original Rice Dream 1 teaspoon dried sage -- crushed 1 tablespoon soy sauce 1/4 teaspoon thyme 1 cup water 1/4 teaspoon marjoram 1/2 teaspoon sea salt pinch black pepper In a 2-quart saucepan, heat oil over medium heat. Add flour and stir often for 2 minutes. Remove from heat and allow to cool for several minutes. In a separate bowl, combine remaining ingredients. Whisk together with the flour/oil, half at a time to avoid lumping. Bring to a boil over medium heat, stirring often. Reduce heat to low and cook for 10-15 minutes, stirring occasionally. If gravy seems too thick, simply whisk in additional water, 1 tablespoon at a time until desired consistency is reached. Adjust salt and pepper to taste. Gravy will thicken as it cools. Stores well in the refrigerator for several days. To serve at a later time, reheat slowly over a medium flame, making sure to stir well. Add a tablespoon or two of water if necessary. Eliminate herbs and adjust other seasonings to taste. Bring water to boil and add potatoes. Reduce heat and cook until potatoes are soft and easily pierced with a fork (about 15 minutes). Drain well and place in medium mixing bowl. Add butter/margarine, salt, pepper and Rice Dream. Using an electric or hand mixer, mash potatoes until thick, smooth and creamy. Adjust seasonings to taste.
