NOTES : Flatbreads are made throughout the Middle East. Soft lavash

wraps are sometimes called Damascus wraps. To approximate the sweet,

gently spicy flavor of Near East pepper, use 3/4 teaspoon sweet paprika

and 1/4 teaspoon hot red pepper flakes.
