Banana Nut Chocolate Chip Bread 1/3 cup butter or margarine, softened 3/4 cup sugar 1 egg 1 cup mashed banana 2 cups all purpose flour 2-1/2 teaspoons baking powder 1/4 teaspoon baking soda 1/2 teaspoon salt 1 cup chopped pecans (or walnuts) 1/2 cup chocolate chips (or more if desired) (i used one cup and no nuts) 1/2 cup buttermilk (i used 1%mild with 3/4t vinegar) Preheat oven to 350F. Cream butter and sugar. Mix in egg and banana. Stir together flour, baking powder, baking soda, salt, nuts and chocolate chips. Add this mixture to creamed mixture alternately with buttermilk. Stir until just blended, pour in muffing pan (this recipe filled my muffin cups (6 texas size) about a 1/4 inch from the top) bake for 35 minutes. Makes 6 Giant muffins
