From Our Cancer Prevention and Wellness Program: A

Substitute for One of Summer's Temptations (High-Fat Ice

Cream)

One thing most of us can do to lower our risk of cancer and

other problems is to reduce the amount of fat in our diet.

With best wishes for a healthy summer, the Memorial

Sloan-Kettering Cancer Prevention and Wellness Program

offers

an easy way to prepare a seasonal classic with only 2 grams

of fat.

@@@@@

Chocolate Frozen Yogurt with Fresh Raspberries

2 tsp cornstarch

1/2 cup sugar

1 can evaporated milk (low-fat)

1 egg, lightly beaten

2/3 cup chocolate syrup

1/2 tsp vanilla extract

1 cup low-fat vanilla yogurt

3 cups fresh raspberries

In a medium saucepan set over medium heat, whisk together

the cornstarch, evaporated milk, sugar, and the egg. Cook,

stirring constantly, until the mixture thickens. Remove

from

the heat and whisk in the chocolate syrup. Cool completely.

When cool, stir in the vanilla extract and the yogurt. Pour

the mixture into the freezer bowl of a frozen dessert

maker,

and prepare according to manufacturer's instructions. Serve

immediately topped with fresh raspberries or, if desired,

transfer to an airtight container and place in the freezer

until firm, about 2 hours.

Place the mixture in a covered container and store in the

refrigerator overnight. Or, if you wish to make the frozen

yogurt right away, chill over an ice bath for 30 minutes.
