I love this little cookbook I just bought - $14.95!! (Written by the food

editor of Chicago Tribune last 20 years and all recipes

tested/tested/tested!) Now, I must get in the kitchen and test some of

these myself! Enjoy.

Cauliflower In Cheese-Wine Sauce (Meade's)

Amount Measure Ingredient -- Preparation Method

1 head cauliflower -- (large one)

(broken apart)

1 cup Velveeta -- see Notes

(diced)

1 egg -- well beaten

1 tablespoon butter

2 tablespoons flour

1/2 teaspoon salt

1/4 teaspoon dry mustard

1/4 teaspoon pepper

1 cup dry white wine

buttered toast

 

Cook cauliflower in boiling salted water until barely tender. Combine

cheese, egg, butter, flour, and seasonings and place over hot water or low

heat. Stir until smooth and blended, then gradually stir in wine. Continue

to cook until smooth and thickened, stirring constantly. Arrange drained,

cooked cauliflower on toast and cover with the hot sauce.

NOTES : Author doesn't call for Velveeta (I did that)...what she calls for

is: " Process nippy cheese " -- but that didn't go well with Mastercook's

ingredient section and I assume she really does mean Velveeta anyway. - Brenda
