Guest guest Posted August 18, 2000 Report Share Posted August 18, 2000 * Exported from MasterCook * Jerusalem Artichokes with Tomatoes (Kerkiofoles me Domato) Recipe By :Greek Vegetarian Cooking - Alkmini Chaitow Serving Size : 2 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 pound Jerusalem artichokes 8 ounces canned whole tomatoes 3/4 cup parsley and/or fresh dill -- chopped sea salt back pepper 1/2 teaspoon dark brown sugar 8 scallions -- chopped 3 to 4 cloves garlic -- chopped 1/2 cup olive oil Scrub the artichokes to remove any dirt and soil. If they are large, cut in two or three pieces, otherwise cook them whole. Place all the ingredients, except the artichokes, into a nonstick saucepan. Add 1 cup water and bring to the boil. When half of the liquid has evaporated, add the artichokes. Partially cover and simmer until all the water has evaporated.
