Guest guest Posted August 18, 2000 Report Share Posted August 18, 2000 I had 2 more formatted from that Greek cookbook I have that I forgot to send earlier- * Exported from MasterCook * Jerusalem Artichokes with Peas (Kerkiofoles me Bizi) Recipe By :Greek Vegetarian Cooking - Alkmini Chaitow Serving Size : 2 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 pound Jerusalem artichokes 1 10 oz package frozen peas 3/4 cup parsley -- chopped sea salt black pepper 8 scallions -- chopped 3 to 4 cloves garlic -- chopped 1/2 cup olive oil Scrub the artichokes to remove any dirt and soil. If they are large, cut in two or three pieces, otherwise cook them whole. Put the ingredients, except artichokes and peas, into a nonstick pan. Add 1 cup of warm water and bring to the boil. When half of the liquid has evaporated add the artichokes and peas.
