Jerusalem Artichokes with Peas (Kerkiofoles me Bizi)

1 pound Jerusalem artichokes

1 10 oz package frozen peas

3/4 cup parsley -- chopped

sea salt

black pepper

8 scallions -- chopped

3 to 4 cloves garlic -- chopped

1/2 cup olive oil

 

Scrub the artichokes to remove any dirt and soil. If they are large, cut in two

or three pieces, otherwise cook them whole. Put the ingredients, except

artichokes and peas, into a nonstick pan. Add 1 cup of warm water and bring to

the boil. When half of the liquid has evaporated add the artichokes and peas.

Partially cover and simmer until all the water has evaporated.
